Wedding Anniversary Card For My Parents and Stampin For The Weekend

Hi everyone, I hope you’re all well. Today is Friday and time for a new challenge over at Stampin for the Weekend!
This week’s theme is always a favorite:
Anything Goes!!
Thant’s right anything you like!

Our sponsor this fortnight is Stamp Fairy, who is offering the prize of a $10.00 gift voucher. Stamp Fairy also sponsored a few digi stamps, for the SFTW DT to use.
Here is my card:
Next Friday is my parents’ 21 wedding anniversary so I made them this card.
I used this beautiful image from Stamp Fairy and colored them with the following Copics:
E37 and E35 - for both the boy and girl’s hair and for the boy’s shoes.
R20, R21 and E00 - for both their skins.
RV34, RV32 and RV0 - for the girl’s dress and bow in her hair.
Y15, Y11 and Y00 - for the girl’s socks/shoes and the boy’s shirt.
E35, E33 and E53 - for the boy’s clothing.
W3 - for a shadow around the stamp.

I used some flowers and pearls from Wild Orchid Crafts.

And some punched out hearts with pearls inside.
This is what the inside of the card looks like.
Please hop over to Stampin for the Weekend and see if you can take part in our challenge!

Fortnightly Baking Fun Challenge #16 is.....

Hello everyone, it’s time for a new fortnightly Baking fun challenge!

I got the idea for this fortnight’s theme when my mother and I was baking shortbread cookies to take on holiday. Most cookie recipes are so simple and easy, I decided to make this fortnight’s theme.........

Biscuits, Cookies and Slices!!!
Anything that fall in the category of a biscuit, cookie or slice. I hope you like this theme and will be entering, because we have an amazing prize this week!

A Cakes & Muffins Biscuits, Slices & More recipe book from Quick ‘n’ Easy!
In this book you will find:
Handy hints and tips for better tasting baking
Quick Conversion Guide
Muffins
Cakes
Big Bakes
Biscuits
Slices
Kids Stuff
Desserts
So my example for the fortnight is Diamond Shortbread Cookies!
This is a very simple and easy recipe:
Makes about 35 cookies
1 3/4 cups flour
1/2 teaspoon salt
1 cup butter, cut into small cubes
3/4 cup granulated sugar
1/4 cup tubinado or granulated sugar (optional) (to sprinkle on top but I didn’t)
1 In a bowl, whisk together the flour and salt.

2 Combine the butter and sugar in the bowl of a stand mixer and cream the butter using the paddle attachment blade on medium to high speed for about 1 minute, or until fluffy.

3 Scrape down the sides of the bow with a silicone spatula, and beat for 1 minute more.

4 Turn off the mixer, add the flour mixture, and turn the mixer on at low speed.
Gradually increase the speed to medium and beat for about 1 minute, or until the dough clump together and you hear the motor straining. The dough will first look like grated Parmesan cheese, then fine gravel, then coarse gravel, and finally a cohesive mass.

5 Transfer the dough to a sheet on parchment paper that will just fit into a sheet pan.

6 Use the rolling pin and your fingers to press the dough into a 22 by 30.5 cm (9 by 12 inch) rectangle about 2.5cm (1/3 inch) thick.

Trim the sides to even up the rectangle and roll the trimmings into the center of the rectangle.

7 Transfer the dough to a sheet pan by lifting each end of the parchment paper. Refrigerate for at least 30 minutes.
8 Preheat the oven to 190 degrees C (375 degrees F).
9 Baked for about 15minutes, or until golden brown on top.

10 Cut into diamonds by first cutting them in strips.

The second time you cut at about a 45-degree angle.

Store tightly sealed in an airtight container for up to 1 week (though they never last that long in our home!).

My example is Mini Chicken Pies:
To make them you will need:
For the pastry:
1 cup cake flour
1 cup all-purpose flour
1/2 teaspoon salt
3/4 cup cold butter, cut into 1cm cubes.
7 tablespoons heavy cream OR 2 eggs lightly beaten.
Chicken filling
melted butter
1 egg yolk
1 whole egg
1 Mix the flour and salt and empty out on a work surface. Sprinkle the butter cubes on top.
2 Take a pizza cutter and start cutting the butter into the flour, till the butter is about the side of peas.
3 Make a hole in the center of the dough and pour the egg inside.
4 Mix until it forms a dough.

5 Brush the tartlets pans on the inside with the melted butter.
6 Roll out the dough (about 2-3 mm thick) and put them in your tartlets pans.
7 Put your chicken filling inside, make sure your chicken don’t have to much sauce or it will make the dough soggy.
8 Put another piece of dough on top and seal the sides with a fork.

9 Brush with the beaten egg yolk and whole egg.
11 Bake at 200 degrees C/ 390 degrees F for 17 minutes or until golden brown.
