Fortnightly Baking Fun Challenge #3................

Hello all my blog friends!
It’s Tuesday and time for a new Baking Fun Challenge!
Now on to this fortnightly challenge.............
Can you guess?
Cup Cakes!!
Any kind of cup cake you like! Big ones small ones, decorated anyway you like.

Here is my recipe:
Mini Chiffon Cup Cakes!!
I made very small cupcakes. This size works especially well for a birthday party, since big cupcakes are always to much for little ones and they only eat the icing.
This recipe makes about 4 dozen mini cupcakes
Ingredients:
1 3/4 cups all purpose flour or 2 1/4 cups cake flour.
1 tablespoon baking powder
1 teaspoon salt
1 1/2 cups sugar
5 egg yolks
1/2 cup orange juice or water
1/2 cup vegetable oil
8 egg whites
1 teaspoon vanilla extract
1/2 teaspoon cream of tarter
Topping:
150g (300ml) icing sugar
2 tablespoons hot water
food coloring (the colors you want)
1) Preheat the oven to 350 degrees F/ 176 degrees C.
2) In a bowl, whisk together the flour, baking powder, salt and 1 cup of sugar.
3) In another bowl stir together the egg yolks, orange juice/water and oil.
4) Beat the egg whites, vanilla and cream of tartar on high speed with a stand mixer for about 2 minutes or with a handheld mixer for about 8 minutes or until medium peaks form.
5) Add the remaining sugar and beat for about another 1 to 2 minutes more or until stiff peaks form.
6) Sift the dry ingredients over the egg whites mixture, about one forth at a time, folding with a rubber spatula after each addition until all the dry ingredients are incorporated.
7) Place about one-forth of the egg white mixture in a bowl with the egg yolks mixture and stir until well combined.
8) Fold this egg yolk mixture into the egg white mixture with a rubber spatula.
9) Put your cupcake holders in little muffin pans (this way the cupcake holders keep it’s shape, after it were filled with the batter).
10) Transfer the batter to your little cupcake holders.
11) Bake for about 25 minutes or until light brown and let cool.
Now for the decoration:
1) Sift the icing sugar in a deep bowl.
2) Add the hot water and stir quickly.
3) Space a few drops of food coloring, in the icing (not on the same spot). You can add only one color or two.
4) Take the back side of a soon and stir it in the icing, like this:

Don’t stir too much.
5) Take a cup cake and dip it up-side-down in the icing sugar.
6) Lift it out, let it drip off a little and then turn around. Here I used blue and yellow food coloring. So it had three colors (yellow and blue makes green)
Add some decorations.
I also made red and blue icing.
There you are! What a cute little cupcake! Now it is your turn to show me your cupcakes with the recipe!
You may also use my recipe and show us an interesting decorating technique Any cupcake you like!!

It could be a sign, book, card, poster/billboard, bottle, anything with letters or words on it.
So when my little sister Danika and my mother was baking “The Ultimate Brownies” (they are AMAZING brownies!! Crisp on the top and sticky in the middle!) for my baking challenge I just had to take a few pictures!!

This is a recipe of a chocolate chip cookie with some chocolate chip pieces.  I really, really like it!!
Danika had to decide on brownies or Chocolate Chip. So she decided on the brownies, but the choc chip recipe was still open. So I took a few pictures.

Please go and vote for me if I’m one of the top five photos. The top five photos will be announced on Sunday.

Time for Tots/ Tots School over at Beautiful Girlhood!

Hi everyone!
I decided to take part in Kelly’s Time for Tots/Tots School draw again. My friend Kelly-Anne is having a draw on activities for toddlers. She posts a post every week with an activity for toddlers and if you have an idea, post it on your blog and stand a chance to be one of the top five favorite tots activities!
I took part in this a while ago. Recently my little brothers and sister made crashed rainbow eggs the other day I thought it would work well for another time for tots entry!
 Crashed Rainbow Eggs!!
What you need:
Old egg shells
Food coloring - all the colors you like!
Ziplock bags
Wooden rolling pin
White card stock
Glue
Give each little one, a Ziplock bag filled with a few eggs shells. Let them crash it with their hands or a rolling pin.

Add the food coloring. Be sure to wear gloves or else your hands will be stained with food coloring!
Let them shake it, so that all the egg shells are colored.
There’s your crushed colored egg shells.
Draw an egg shape on a piece of white card stock. Put glue all over the egg shape.

Let your tots make patterns with all the different egg shells colors on the egg shape.
Like this. Leave it to dry and then throw off the loose egg pieces.

There you are!

Please hop over to Beautiful Girlhood and take a look at her Time for Tots activities!
Have a blessed week
