I have an e-mail entry for my Fortnightly Baking Fun Challenge, from a dear friend of mine’s mom.
Aunty Hazel made Spinach and Butternut Quiche!
Here is her recipe:
Ingredients
1 cup plain flour
75g butter
iced water
1 cup butternut
tomato slices
red or yellow pepper, sliced
15ml olive oil
1 onion, chopped
1 large handful spinach
10ml butter
250ml cream or milk
3 egg yolks
1 cup grated cheese
1 slice round feta
salt and pepper
Method:
Mix the butter and flour until the mixture looks like breadcrumbs.
Pour in the iced water and knead until dough forms a ball. Cover and
refrigerate for 30 minutes. Grill the butternut, tomato and pepper
with a little oil at 180 degrees celsius. Fry the onion and spinach
in butter until soft. Add cream, egg yolks, cheese and veggies. Roll
out the dough and press into a pie dish. Bake blind until golden.
Pour in filling and bake until set.
