Fortnightly Baking Fun Challenge #6...........

Hello everyone! I hope you are all doing well.

 It is time for a new Fortnightly Baking Fun Challenge! If you haven’t voted for your favorite Italian Food recipe, from the last challenge, please take a few moments to vote here.
Now the theme for this fortnight’s challenge is...............
Muffins!!!!!
Any kind of muffins, big ones, small ones, sweet ones, salty one etc.
The PRIZE this fortnight is......

My sample for this challenge is..........
Blueberry Muffins!!
Makes twelve normal size muffins. 
Ingredients:
½  cup butter, at room temperature, plus more for the muffin cups.
1 ¾  cups plus 2 tablespoons flour, plus more for the muffin cups.
1 teaspoon Baking Soda 
½  teaspoon Baking Powder
½  teaspoon Salt 
¾  cups granulated Sugar 
2 eggs 
½  cup sour cream 
¼  cup milk 
1 pint/2 cups blueberries (it’s not necessary for that much can only use one cup too)
Confectioners’ Sugar (optional)
Method:
1 Preheat the oven to 175 degrees C/ 350 degrees F. 
2 Unless you are using a nonstick pan, brush the muffin tins with butter and dust them with flour. 
3 In a bowl, whisk together the 1 ¾  cups flour, the baking soda, baking powder and salt.
4 In a large bowl, cream the butter and sugar by hand or with a handheld mixer for bout 4 minutes in a stand mixer about 2 minutes, or until smooth. 
5 Add the eggs one by one waiting until the first egg is absorbed before adding the second.
6 Sift the dry ingredients over the butter-egg mixture, and stir in the sour cream and milk. 
7 Stir the mixture with a rubber spatula until all the liquid is absorbed and there is no loose flour in the bowl. Don’t overwork the mixture.
8 Toss the blueberries with 2 tablespoons flour and fold them into the batter.
9 Fill the cups of muffins tins three-quarters full with batter.
10 Bake for about 25 minutes, or until gold brown and a knife or toothpick stuck into one of the muffins comes out clean.
11 Turn out onto a cake rack and sprinkle with confectioners’ sugar (Optional). 

Served hot with butter, it’s delicious.

-Age doesn’t matter, from little girls to grandmas are welcome to enter!
-The aim of the challenge is to encourage mothers and grandmas with their girls to enjoy making food in the kitchen, to share recipes, find new ones and have lots of fun together!
