Fortnightly Baking Fun Challenge #5:


Hello everyone. Today is Tuesday and it is time for a new Fortnightly Baking Fun Challenge. If you haven’t voted for you favorite Pudding and Desserts recipe, PLEASE go and VOTE here
Since all the my baking challenges so fare was something sweet I decided to have something savoury this week. So the theme is................

Italian Food!!!!!
Now don’t be scared off by not knowing what Italian Food is.
Any kind of Pasta, Pizza, Lasagna etc. You get LOTS of different pastas and I’m sure you and your family must have at least one favourite Pasta recipe!!

Each mouth-watering recipe is clearly set out with a list if ingredients, preparation and cooking times, step-by-step instructions and a beautifully photographed serving suggestion.
My example is, my favorite meal, our Saturday night’s homemade Pizza!!

Makes 5 large and 5 small pizzas. (Sorry for the large amount, but I don’t have it smaller!)
 Ingredients for the base:
1.100kg refined spelt flour (or 900g all purpose flour)
8 eggs 
5 egg yolks 
3 teaspoons baking powder 
1 teaspoon salt 
100ml water.
The secret is not to let your dough be to though. Rather make it more sticky and kneed in some more flower than making it to stiff.

Topping:
Tomato puree
Fried Chicken in a little butter and mixed with a dash of chutney
 Spaghetti Bolognese mince (you don’t have to have both chicken and Bolognese mince)
Pineapple cut in small cubes 
Tomatoes, if cherry tomatoes cut into rings, if large cut in cubes
Mushrooms cut into slices 
Green, red and yellow peppers cut in small cubes
Onions cut into rings 
Garlic cut in VERY small pieces mixed in a small bowl with a little bit of olive oil
Chillies cut in small pieces and mixed with a bit of olive oil (if you like it hot).
Olives cut in half 
Feta cheese cut in cubes
Mozzarella cheese
1 mix all the base ingredients in a strong stand mixer until well combined.
2 Take out of the stand mixer and kneed the dough, you can also add some more flour if needed.

3 Divide the dough into 10 pieces to roll into a thin round layer.
If the amount of dough is too much, you can bake the bases, and freeze the extra basis, until needed again (will save you time the next time!)
4 Punch holes in with a fork.
5 Put in the oven, that should be about 180 degrees C.
6 As soon as the sides of the dough starts to lift up, turn around. 

7 Repeat till the dough is strong and when you hold it, it doesn’t collapse.
8 Spread the tomato puree on, to your required taste.

9 Add some salt, and some dried thyme for flavour.


10 Start by putting on the mince and then garlic and chillies. Some of us like only chicken others like just bolognese mince and other half-half.
11 Add all your other ingredients, small things first and then to larger things.
12 Add the mozzarella cheese last.
13 Bake in the oven till the cheese is brown at the top. 


14 Serve strait away! Don’t through away left-overs, when reheated(in the oven and NOT the microwave) it makes a fantastic Sunday morning breakfast!

-Age doesn’t matter, from little girls to grandmas are welcome to enter!
-The aim of the challenge is to encourage mothers and grandmas with their girls to enjoy making food in the kitchen, to share recipes, find new ones and have lots of fun together!
