Fortnightly Baking Fun Challenge 4...........


Hello all blog readers! WOW can you believe it, two weeks has gone by SO fast! Well that means a new Fortnightly Baking Fun Challenge!!
I want to thank everyone who joined in last week for my Cupcake challenge. You can have a look at the entries here and then vote for your favorite cupcake on the side on my blog!
Now the theme for this fortnightly challenge ……….

Puddings and Desserts!!!!!!!
That’s right, any kind of pudding or dessert you like.
My sample is Crème Brûlée.
Since my family loves Crème Brûlée for a pudding, I thought I would use it as my sample for this challenge!
This recipe makes 6 ramekins servings.
2 cups Heavy Cream 
1 Vanilla Bean or 2 teaspoons Vanilla extract.
6 egg yolks 
1 cup sugar
1 Preheat the oven to 300 degrees F / 150 degrees C.

2 Pour the cream into a saucepan add the vanilla bean/extract 

3 Place over medium heat and bring to a simmer. 

4 Meanwhile, in a bowl, whisk together the egg yolk and 1/2 cup of the sugar for about 2 min, or until slightly pale.

5 Remove the cream from the heat, if you used a vanilla bean, remove from the pan with a knife, scrape the little seeds from each half of the vanilla pod back into the pan or if you are using the vanilla extract, stir it in.

6 Gradually pour the hot cream into the egg mixture while whisking constantly. 

7 Continue stirring until no egg yolk clings to the sides of the bowl. 
If you see specks of cooked egg, strain the mixture through a fine-mesh strainer.

8 Arrange 6 ramekins in a baking pan or sheet pan that is at least as deep as the dishes.

9 Divide the custard mixture evenly among the molds. 

10 Pour the hottest tap water into the baking pan to reach halfway up the sides of the molds.
11 Bake for 40 min, or until the surface of the custard doesn’t jiggle when you gently move the mold back and forth.

12 Remove the molds from the water bath and let cool on a rack for about 1 hour, or until they are room temperature
13 Then cover and refrigerate for at least 1 hour or up to 3 days before serving.(I find 3-4 hours works good)

14 No more that one hour before serving, sprinkle the remaining 1/2 cup of sugar evenly over the tops of the custards, covering them with a thin layer. 
15 Tilt a kitchen torch/blow torch over each custard so the flame is about 2 inches/5 cm from the surface, and move the torch around until the sugar melts and caramelizes, forming a thin sheet.
16 Alternatively, preheat the broiler and position the rack 3 inches/ 7 1/2 cm from the heat source. 
17 Top the custards with the sugar, slide them ender the broiler, and broil for about 1 min, or until the sugar caramelizes.

18 Serve immediately or refrigerate until you’re ready to serve.

-The aim of the challenge is to encourage mothers and grandmas with their girls to enjoy making food in the kitchen, to share recipes, find new ones and have lots of fun together!
