Fortnightly Baking Fun Challenge #3................

Hello all my blog friends! 
It’s Tuesday and time for a new Baking Fun Challenge!
Now on to this fortnightly challenge.............
Can you guess? 
Cup Cakes!!
Any kind of cup cake you like! Big ones small ones, decorated anyway you like.

Here is my recipe:
Mini Chiffon Cup Cakes!!
 I made very small cupcakes. This size works especially well for a birthday party, since big cupcakes are always to much for little ones and they only eat the icing.
This recipe makes about 4 dozen mini cupcakes
Ingredients:
1 3/4 cups all purpose flour or 2 1/4 cups cake flour.
1 tablespoon baking powder 
1 teaspoon salt
1 1/2 cups sugar 
5 egg yolks
1/2 cup orange juice or water 
1/2 cup vegetable oil
8 egg whites 
1 teaspoon vanilla extract  
1/2 teaspoon cream of tarter 
Topping:
150g (300ml) icing sugar
2 tablespoons hot water
food coloring (the colors you want)
1) Preheat the oven to 350 degrees F/ 176 degrees C.
2) In a bowl, whisk together the flour, baking powder, salt and 1 cup of sugar.
3) In another bowl stir together the egg yolks, orange juice/water and oil.
4) Beat the egg whites, vanilla and cream of tartar on high speed with a stand mixer for about 2 minutes or with a handheld mixer for about 8 minutes or until medium peaks form. 
5) Add the remaining sugar and beat for about another 1 to 2 minutes more or until stiff peaks form.
6) Sift the dry ingredients over the egg whites mixture, about one forth at a time, folding with a rubber spatula after each addition until all the dry ingredients are incorporated.
7) Place about one-forth of the egg white mixture in a bowl with the egg yolks mixture and stir until well combined.
8) Fold this egg yolk mixture into the egg white mixture with a rubber spatula. 
9) Put your cupcake holders in little muffin pans (this way the cupcake holders keep it’s shape, after it were filled with the batter).
10) Transfer the batter to your little cupcake holders. 
11) Bake for about 25 minutes or until light brown and let cool.
Now for the decoration:
1) Sift the icing sugar in a deep bowl. 
2) Add the hot water and stir quickly.
3) Space a few drops of food coloring, in the icing (not on the same spot). You can add only one color or two.
4) Take the back side of a soon and stir it in the icing, like this: 

Don’t stir too much. 
5) Take a cup cake and dip it up-side-down in the icing sugar.
6) Lift it out, let it drip off a little and then turn around. Here I used blue and yellow food coloring. So it had three colors (yellow and blue makes green)
Add some decorations.
I also made red and blue icing. 
There you are! What a cute little cupcake! Now it is your turn to show me your cupcakes with the recipe!

-You are all allowed to advertise anywhere you like for people to vote for you, on your blog, Facebook, Twitter, etc.
-I will have a personalized blinkie, specially for the Winner.
-Age doesn’t matter, from little girls to grandmas are welcome to enter!
-The aim of the challenge is to encourage mothers and grandmas with their girls to enjoy making food in the kitchen, to share recipes, find new ones and have lots of fun together!

  1. Oh Wow!!! What a great theme!! Beth got a book on 'Cupcakes for Princesses' for Christmas, so I'm gonna have a look and try some with her!!! I will certainly enter this fortnight!   5. Finally - I've entered with Butterfly Fairy cupcakes...I love these cakes so much as they aren't so sweet - the jam and cream worked so well! Glad you got more entries! Miss you so much and cannot wait to see you again! Love, Kelly-Anne xxxxxx
